This coffee was directly sourced from Rafael Vinhal and his family’s estate, we thank you for all your hard work and tireless dedication to your craft. Juicy, candy-like, with cozy chamomile undertones, this coffee is truly a unique flavor experience. When warm, we get notes of classic purple grape juice, with a finish reminiscent of pink bubblegum. As it cools, a brighter acidity starts to shine through, reminding us of red grape juice, while still retaining a lingering candy-like sweetness and floral qualities. This coffee has been a ton of fun to work with, so we hope you enjoy.
Coffee cherries are harvested and floated to select ripe cherries. After the cherries are selected, they undergo a 58hr dry aerobic fermentation, followed by a thermal shock to halt fermentation. Once complete, cherries then undergo an anaerobic fermentation of 180hrs, then another thermal shock. Cherries are then depulped, leaving the mucilage completely in-tact, and undergo a final anaerobic fermentation of 120hrs. Finally, the coffee is left to dry on raised beds for a period of 20 days.
