Coming to us from our importing partners at Falcon Coffee, this Carbonic Natural process coffee is truly indulgent. Candy-like sweetness of molasses and maraschino cherry mingle with a rich malt chocolate finish. This coffee is really a treat, we hope you enjoy.
Coffee cherries were selectively harvested by density and ripeness, then left to ferment anaerobically for 72 hrs. The sun-drying process was carried out for 28 days on raised African beds. The desired outcome is a product with an exceptional mouthfeel and sweet balance - enhancing with ripe fruit forward notes through controlled mild fermentation.
Producer Profile
Fatima farm was acquired in 1970 by Antonio Orea and Genoveva Perez-Redondo. Fatima’s coffee was used as a high-quality commodity lot until 2018 when Givette and Ernesto, both third-generation producers, decided to enter the specialty coffee market.
In 2019, Finca Fatima became a Cup of Excellence winner, with a score of 89.41 points, using the criolla typica varieties of Coatepec. Once again in 2021, Finca Fátima was an international winner of the Cup of Excellence.
